Fro (no)Yo: Dairy Free, Delicious, Whole Foods Soft Serve


I call it the last supper.  It's the night before i'm giving up solid food for an extended period of time.  Rather than dreaming about what my last supper might look like, i'm trying to figure out a half decent dish i can make using up any fresh produce left in the fridge.  Most likely the berries will go into the freeze, the boyfriend will get the avocados when they get to their perfect ripeness, and i'll be making an 'everything but the kitchen sink' sort of salad for dinner tonight.  So since "the last supper" might be less than outstanding, i decided to whip myself up a little fro (no)yo as my 'before the last supper' treat.  This is the most amazing (and whole foods) way to have a summer sweet ice cream that doesn't weigh you down, bloat you up, or give you that dairy hangover (for those of you who are lactose intolerant or just fro yo addicted you will LOVE what i'm serving up today...Kali, this recipe is for you girl!!!)  You can make this recipe a ba-zillion different ways to create your fave fro yo like flavor, but today's flavor is Nutter Butter Date.

You'll need a food processor and a couple frozen bananas, a date, cinnamon, and almond butter.

When you freeze bananas, make sure you peel them first and then chop them into 1 inch segments.

The basic formula for making your soft serve/fro (no)yo is to whip up 2 frozen bananas in your food processor along with any other flavors you'd like to add.  Typically you'll have to blend for a few minutes until the chunks finally process down to a whipped soft serve consistency.  You may need to scrape the sides during the first minute or so.  Your soft serve will be done in under 5 minutes.   Add in ideas would be a cup of frozen berries, a few tbsps of cacao powder, carob/cacao or chocolate chips, mint or vanilla extract or vanilla bean.....


Nutter Butter Date Fro (no)Yo:

2 frozen bananas, 1 or 2 pitted medjool dates, a few dashes cinnamon, and a generous scoop of almond butter.

whip in your food processor for a few minutes until its a light and fluffy soft serve.  Pour into a bowl and enjoy.
