Are you sensing a theme with these fabulously fresh raw soups? My vita-mix has been blazing up some great concoctions lately, outfitted with loads of fresh veggies and lots of micronutrients. Inspired by my friend and professional raw food chef Joy Houston of The Delicious Revolution, here's my stab at raw tortilla soup, a recipe similar to one she shared with my last Cleanse Group. I used whatever spices my cabinet and fridg-y offered, and garnished with some organic corn, garden fresh cilantro, avocado, and tomato. This soup is pure, clean, raw food: the kind of food that gives you energy, makes you feel amazing, and keeps a girl looking good in her skinny jeans.

Sexy Mexi Skinny Girl Soup:
1 yellow bell pepper
1 medium ripe red tomato
2 stalks of celery
1/2 an avocado
juice of 1 lime squeezed
1 1/4 cups water
green onion, or onion powder
any fresh herbs (thyme, rosemary, parsley, sage) you have on hand
Toss the bell pepper, tomato, celery, most of the avocado (leave some for garnish), lime, and water into your vita mix or other high speed blender with heating element. Add any spices to your liking. I used chili powder, cumin, hot curry powder (love this spice!), cayenne, and tossed in a little fresh thyme, sage, and a pinch of fresh rosemary. Blend for a while until soup is warm (Vita Mix blenders will warm food up as they blend, not all blenders have this function). Pour into two serving bowls and garnish with fresh raw corn from the cob, a few slices of tomato, avocado, and fresh cilantro.
