Lip Smacking Good Veggie Sam'ich


There are a few key components when making a tasty veggie sam'ich.

1.  avocado
2.  condiment/seasonings
3.  good bread

Since i'm a GF girl i usually use rudy's or udi's breads (the only thing i dislike about udi's is that they use corn syrup as an ingredient in their mold inhibiter.  Not Cool, Udi...figure it out, dude.)  Since i don't eat bread much i store it in the freezer (a bag of bread will last me months) and occasionally will toast a piece lightly for sammies or toast in the oven to make croutons.  I recently purchased and tried Udi's millet and chia bread and really liked it.  It holds it's shape well when stacked against piles of veggies and their milllet/chia bread has 5 grams of fiber per serving (2 slices).



Veggie Sammie:

Toast the bread lightly (to thaw if storing in freezer)
Mix a little balsamic into a few big dallops on stone ground or honey mustard and slap on both pieces of bread
Sprinkle over this a little italian seasoning mix
Layer with:  sliced avocado, thinly sliced cukes, thin sliced bell pepper, thin sliced crimini mushroom, and a little spinach.
Top with the second slice of bread, press gently, plate, and enjoy!
