Strawberry Basil Popsi's: The Perfect Afternoon Cool Down



Here's a great healthy sunny afternoon treat that takes only two ingredients, less than five minutes to prep, and (patience needed) a little freezing time.

You'll need:

1 pint of organic strawberries
1 small handful of basil leaves (5-10 leaves)
blender
popsicle molds

Strawberries are rich in Vitamin C, antioxidants, and full of fiber.  These treats have under 50 calories and will have your taste-buds dancing while you soak up the summa-time sun.

Grab your popsicle mold & measure how much liquid one of the popsicle molds holds and multiply that with how many molds you have.  Example: one single mold of mine held 4 oz fluid.  i had 4 molds, so i  had to make sure i had 16oz total for the molds.  One pint of strawberries produced a little more than 16oz of fluid.....enough to make a cocktail out of the remainder (though i did not do this, my girlfriend suggested adding vodka for an incredibly fresh summer cocktail.  ;)



Hull a pint of strawberries, wash, and toss into your blender.  Blend until pureed lightly.  Add a few leaves of basil (5-10 depending how strong you want the basil flavor).  Pulse into the blend.  You should have what looks like a thick smoothie.

Pour this into your molds, cap, and freeze until done.



Simple as that.  Enjoy under the sun with a smile upon your lips.
