Light, Refreshing, and Filling: Heavenly Summer Salad


Here's an easy and absolutely fabulous salad that highlights one of summer's refreshing fruits.  This recipe does contain cheese, so feel free to omit the cheese, or use a seed or nut cheese substitution.  HOWEVER, i think it's the little bit of stinky cheese in here that makes this dish so much more yummy!

3 cups loosely packed baby spinach, torn
1 heart romaine chopped
thinly sliced red onion (i used a mandolin)
1 nectarine or peach chopped
optionally 1 pear chopped
1/4 cup golden raisins
2 tbsp gorgonzola or blue cheese crumbles

dressing: seasoned rice wine vinegar, EVOO, lemon, sea salt, and cracked pepper corns



Mix the dressing on the side so that you get it to the acidity that you like, then toss with your salad.
