LOVIN' LIMAS!!!!: Fresh, Lean, & Green Summer Salad


Here's a really simple and flavorful salad to invite to your summer table.  I've found that lima beans make a great replacement for edamame/soybeans if you are trying to keep soy out of your diet.  The dressing is simply fresh herbs with lemon and cracked black pepper....doesn't get fresher or easier than that!

Fresh, Lean, & Green Summer Salad:

Mixed greens of choice or spinach
1 bag of organic frozen lima beans (cook per directions on bag then put in an ice bath to cool)
1 ripe avocado (halved, pitted, then sliced)
a couple ripe tomatoes (segmented)
handful of cilantro (i use scissors to chop directly onto the salad)
handful of thyme (pull the leaves off the stem by running your finger down the stem in the opposite direction of which the leaves are growing)
lemon (cut in half and squeeze)
cracked black pepper (to taste)
mist of EVOO
 
Put the greens in a salad bowl and mist with EVOO.  Toss in your tomatoes, lima beans, avocado, and chop the herbs right on top of the salad.  Squeeze lemon over top making sure to cover avocado so that it doesn't brown.  Crank in a little cracked black pepper.
