I'm into it. I love building parfaits. They are so pretty to serve and really fun to eat. So many flavors and textures to prance on your palette. Layer berries, fruits, granola, nuts, seeds, and don't forget your creamy layer (as if you could forget that!). Your creamy layer can be yogurt (check out green valley for lactose free dairy yogurt), chia pudding (let chia set in almond milk overnight or increase amount of chia to make it thick quicker), or cashew cream (recipe below).
Pick your favorite glass or jar and start by adding a layer of berries or chopped fruit, add a layer of nuts/seeds/muesli or granola, and then a few spoonfuls of your creamy filling. Start the layering over again, ending with berries, granola, or both. I love to add a few dried cranberries at the top.

Now stick your spoon in.....deep....and get a good whalloping of parfait maddness in your face.

Cashew Cream
This was the exact recipe i used but feel free to use just one type of stevia or agave instead, and vanilla extract instead of the paste:
1 cup raw cashews
1/2 cup water
1/4 tsp vanilla bean paste
2 drops vanilla stevia
4 drops plain stevia
If you soak your cashews you may need slightly less water.
