Fresh Chilled Summer Soup


Raw soups are a fantastic summer food.  If you have a Vita Mix blender you can easily puree a great base to enjoy chilled or warmed.  This soup only needs to be run for a few seconds in the blender so it doesn't warm up.  The jalapeno in it gives it just enough fire to balance out the mild chill from any refrigerated veggies used.  This soup is slightly sweet from the coconut, cooling from the basil and cilantro, and the cucumber and celery offer a really refreshing taste.  Enjoy with any of your favorite seasonal veggies chopped in.

Blend all of these ingredients for the soup base:

1/2 cup of water from a coconut
1 cup of pure water
2 big spoonfuls of coconut meat (from inside the coco)
1/4 of an avocado
1/4 of a peeled cucumber
1/4 of a jalapeno pepper
juice from 1/2 a lime
3 small stalks celery
4 basil leaves
handful of cilantro

Put the blended base in a big soup bowl and add in any chopped veggies:

chopped tomatoes, about 4 cherry tomatoes
chopped cucumbers, 2 Tbsp
freshly cut raw corn from 1/2 a cob
chopped avocado, 2 Tbsp

This will make one big bowl of soup, or two smaller cups.
