Making Love In The Kitchen: A Hot Mess



Rise and Shine Hot Stuff....It's Saturday morning and i'm feeling RANDY!  
Clear the counters Sexy, it's time for a love making sesh in the kitch.    

Now veggie heads don't be skerred, but yes, there are eggs involved in this love makin' sesh.

Alternately you can always omit the eggs and bump up the amount and variety of veggies to make an even more incredible, possibly even hotter, hot mess of a breakfast.

Here's the basics:
chop up a variety of veggies (i used cooked broccoli, zucchini, yellow bell pepper, spinach, and jalapeno.
Whip up some eggs (i did 4 whites, two yolks) - veggie heads leave it out and use just the black beans
Get your salsa ready, black beans out, slice some avocado, and heat up some corn tortillas in the oven.

Heat the chopped veggies in a pan until cooked lightly (leave spinach or any greens toward the end of cooking).  Add a little cooking oil, lower heat, and pour in your eggs if using.  While cooking the scramble toss in the greens to wilt lightly.  I added a few cranks of black pepper, crushed red chili pepper, and a shake of italian spice mix.  Make the salsa.

Salsa ingredients:  in a food processor add fresh tomatoes, jalapeno, cilantro, fresh lime juice, salt, red onion, garlic powder, and tapatio.  This was the BF's job.....he likes it HOT!!!!

Serves Two.  To serve plate the warm tortilla.  Stack with scramble, black beans, salsa, and 1/2 a ripe sliced avocado.
